Tortellini Skewers
( from the Pioneer Woman)
Makes 36 mini skewers
Ingredients:
4 tablespoons olive oil
2 tablespoons pesto (jar)
2 teaspoons red wine vinegar
1 packages spinach tortellini, cooked and cooled* (I used one package from Trader Joes; they worked perfectly)
1 pint of cherry tomatoes
12 ounces fresh mozzarella, cubed
Directions:
Cook tortellini according to package and let cool (I made mine the day before and let it chill overnight)
Cut the tomatoes into halves or fourths depending on the size
Cube the mozzarella
Put a tortelli, tomato, and mozzarella on a toothpick and repeat until finished.
Mix the olive oil, pesto, and red wine vinegar together.
Drizzle over skewers.
Serve immediately
Recipe Thoughts:
This recipe looks fancy and I love that because it's super easy. The original recipe said that it yielded 18 skewers, but I didn't have skewers (and I'm cheap) so I used toothpicks. I actually liked the way they turned out better. These were served at a Christmas party and were perfect for vegetarian guests.
