Crockpot White Bean Chicken Chili
(from dashing dish)
Serves: 6 (1 cup portions)
Ingredients
1 & 1/4 lbs boneless/skinless chicken breast, cut into cubes (about 3 breasts)
2 C Chicken broth (look for low-sodium)
11 oz Canned white corn (drained)
2 (15 oz) Cans Great Northern Beans (drained and 1 can pureed in the blender).
1 White onion, chopped (size depends on how much onion you like)
4oz Canned green chiles, chopped (optional)
14oz Can diced tomatoes.drained (look for low-sodium)
1/2 t Garlic powder
1 packet White Bean Chili Seasoning Mix (I have only been able to find this at Walmart)
1/2 C of Non-fat Greek yogurt
Directions:
Combine all ingredients except for the yogurt into your crockpot.
Cook on low for 8 hours.
Stir in the Greek yogurt
Serve immediately or let cool and freeze.
Recipe Thoughts:
This recipe has become a staple in our house. It's great for groups because it can be tailored to fit a variety of diets. My lovely friend Sarah was getting married and we needed a vegetarian dish for the rehearsal dinner. We made this without the chicken and used vegetable broth instead; it tasted just as good. If you need dairy-free, just eliminate the yogurt. We try to make freezer meals a few times a year and this recipe is always on the list. It's super easy and freezes really well.
