Pumpkin Chipotle Pasta with Crispy Pancetta
Serves 6
Ingredients:
1 box of pasta, such as rigatoni or bow tie (look for whole grain or veggie pasta if possible)
1 jar of pumpkin chipotle pasta sauce (found at Aldi)
6 oz of pancetta
1/2 C of non-fat Greek yogurt
Grated Parmesan for garnish
Directions:
Cook & drain pasta according to directions
Cook pancetta until crisp, drain, and set aside.
Heat sauce in sauce and stir in the Greek yogurt.
Add pancetta to sauce mixture.
Top cooked pasta with sauce and garnish with Parmesan.
Serve immediately.

Here's a fact you should know- I LOVE Aldi. I actually get cranky when I have to shop somewhere else for regular groceries. Each ingredient in this recipe came from there. I made this on a whim one night and we devoured it. The yogurt adds a creaminess to the sauce that feels like heavy cream, but without the calories. If you cannot find the pasta sauce, let me know. We can probably make it from scratch.
