Sloppy Lentil Joes (from Squash Blossom Babies)
Serves: approximately 6 Active Time: 20 min Passive Time: 20 min

Ingredients:
3 cups of water 28 oz of canned diced tomato (look for low sodium)
1 cup of dry lentils 3 T of tomato paste
1 small onion diced 2 T of brown sugar
1 bell pepper diced 2 T of Worcestershire sauce
1 carrot diced 1 t of mustard or dry mustard
1 clove of garlic minced 1 bottle of chili sauce*
1 T of smoked paprika* 1 T of olive oil
1 T of chili powder
1 t of chipotle powder*
Directions:
Prepare the Lentils
Rinse the lentils thoroughly and place in a pot with the 2 cups of water.
Bring to a boil, then lower to a simmer for approximately 20 minutes. Do not overcook.
Drain lentils and add to veggie mixture
You want the lentils soft they will continue cooking with the other ingredients
Prepare the Mixture
Sauté the onion, pepper and carrot in olive oil 5-10 minutes.
Add the garlic and spices (except the dry mustard if using it).
Cook stirring constantly for 2 minutes.
Stir in remaining ingredients and simmer over medium heat for about 20- 30 minutes
Recipe Thoughts
So I made this recipe for a Christmas party because I had some friends coming that were vegetarians, plus I thought I might get people to try something new. I was really excited because I had about 3 or 4 people tell me how much they loved this! My husband and I discovered lentils were a great meat substitute because of their texture in tacos, sloppy joes, or casseroles.
This recipe is perfect for those vegetarian friends in your life or for a meatless Monday dish. I don't recommend making these in a slow cooker because the lentils could dry out too easily. Also, I can almost always find substitutions for ingredients, but for me, there is no substitute for chili sauce. It gives these sloppy "joes" the tanginess of how sloppy joes should taste.
